Himalayan Hot Honey Halloumi Flatbreads
Sweet, Salty and Gently Spiced
Golden halloumi, creamy garlic yoghurt and fresh salad are layered over warm flatbreads, then finished with a glossy drizzle of BeeBlend Himalayan Multi-Flora Honey infused with chilli and lemon.

Ingredients
For the flatbreads
- 4 soft flatbreads
- 450g halloumi
- 1 tbsp olive oil
- 1 small cucumber, thinly sliced
- 150g cherry tomatoes, halved
- A handful of rocket or shredded lettuce
- 80g pomegranate seeds
- A small handful of fresh mint leaves
For the Himalayan hot honey
- 3 tbsp BeeBlend Himalayan Multi-Flora Honey
- ½–1 tsp chilli flakes, depending on taste
- 1 tsp fresh lemon juice
- A small pinch of salt
For the garlic yoghurt
- 150g thick Greek yoghurt
- 1 small garlic clove, finely grated
- 1 tsp lemon juice
- A pinch of salt
- Freshly ground black pepper
Method
- Prepare the hot honey. Add the BeeBlend Himalayan Multi-Flora Honey, chilli flakes, lemon juice and salt to a small bowl. Stir until combined, then set aside to allow the flavours to infuse.
- Make the garlic yoghurt. Mix the Greek yoghurt with the grated garlic, lemon juice, salt and black pepper. Place it in the fridge while preparing the remaining ingredients.
- Cook the halloumi. Cut the halloumi into slices and pat them dry with kitchen paper. Heat the olive oil in a frying pan over medium-high heat. Cook the halloumi for around 2 minutes on each side until deeply golden.
- Warm the flatbreads. Heat them briefly in a dry frying pan, oven or microwave until soft and warm.
- Assemble the flatbreads. Spread each flatbread with garlic yoghurt, then add the rocket, cucumber, tomatoes and golden halloumi.
- Scatter over the pomegranate seeds and fresh mint. Finish with a generous drizzle of Himalayan hot honey and serve immediately.
Serving suggestion
Serve with lemon wedges and extra Himalayan hot honey at the table. For a larger meal, add crispy seasoned potato wedges, couscous or a fresh Mediterranean-style salad.
Easy variations
For a milder version, leave out the chilli flakes and drizzle the flatbreads with plain Himalayan Multi-Flora Honey. You could also replace the halloumi with grilled chicken or roasted cauliflower.
